Mini Chocolate Chip Muffins

I'm assuming you've all had a chocolate chip muffie from Panera, right? If not, you're still in for a real treat.

These mini muffins taste exactly like the ones at Panera. Moist, crumbly, and full of chocolate chips. Of course, these are much healthier, which means you can munch on more than just one!

This recipe was even approved by my harshest critic. My sister. She absolutely adored them! She's also a big Panera muffie fan and said the muffins tasted exactly like those.

But you can be the judge of that.

2 c. almond flour
1/4 t. salt
1/2 t. baking soda
2 eggs (works best if eggs are large)
1/4 c. grape seed oil
1/3 c. honey
1 t. almond extract
1 t. vanilla
1/2 c. mini chocolate chips

1. Mix together almond flour, salt, and baking soda in a medium sized bowl.
2. In a separate bowl, beat eggs, grape seed oil, and honey together.
3. Add to almond flour mixture. Stir in almond extract and vanilla.
4. Add chocolate chips. Line mini muffin pan with cupcake liners or grease.
5. Bake at 350 degrees F for 15-17 minutes. Makes 24 mini muffins or 12 regular.
