Mexican Sweet Potato Hash

I've never really had sweet potatoes for breakfast until a day or so ago. I always had white potatoes. But I don't think I'll ever want white potatoes again. Just kidding, there's room in my heart for all kinds of potatoes. ;)


But seriously, in my opinion sweet potatoes are so much better than regular potatoes. They have more flavor, more vitamins, and more nutrients. Plus, they're so versatile! But people (including myself) often fall into the trap that there are fours ways to eat sweet potatoes: mashed, roasted, baked or as fries. That is so not true! You can put them in salads, soups, stews, casseroles, muffins, cakes, bars, the list doesn't end!

And another way you can eat them? For breakfast. ;)


I was a little leery of my concoction before I tasted it. Really, all I did was throw a bunch of ingredients together and hope they turned out alright. One bite was all it took to know that it was delicious. All of the ingredients together made the hash sweet, spicy, and completely flavorful.

However, this recipe isn't vegan. I'm sure that can be easily fixed, though. Maybe try using a vegetarian breakfast sausage substitute or tofu. You could even try experimenting with some sort of bean or lentils. If you try one of these options, please be sure to report back! I'd love to hear your results. :)

1/2 sweet potato, cut into strips
1 jalapeno chicken sausage (I get mine from Trader Joe's, again, but you can use any kind of sausage or meat you want really)
1 T. minced onion
dash salt
dash garlic powder
pinch cayenne powder
dash smoked or regular paprika
salsa, cilantro, hot sauce, etc.

1. Cut up your sweet potato and throw it into a greased hot skillet on medium heat. Cover and let it cook for about five minutes.
2. Meanwhile, mince your onion and dice up your sausage.
3. Come back to your sweet potato and flip it. Add the sausage and onion. Mix it up and let cook for another five minutes, stirring occasionally.
4. You know it's done when the sweet potato is crispy on the outside and soft on the inside. If your meat isn't pre-cooked make sure it's done.
5. Serve with hot sauce, salsa, cilantro, and whatever else you wish to top it with.

I love to have sweet potato fries, but I also like them freshly baked. Those are probably the most classic ways and I think they are the best, personally.

    I love sweet potatoes too. Fries are great, but just plain baked are tasty!

    1. I love plain baked, too. Sometimes, for breakfast, I'll heat one up, mash it up a little, add almond milk, blueberries, and cinnamon, then eat it! It's an amazing breakfast. :)

  2. It looks so spicy and delicious:) Just in time for Cinco de Mayo (I love that holiday!), too!
    My favorite way to eat sweet potatoes is as fries, probably. Sweet potato fries taste even better than normal potato fries!!!

      Sweet potato fries are amazing. If given the choice between sweet potato fries and regular fries, I'll go for the sweet potato every time. ;)
