Sweet Potato Fries & Veggie Mix

I had the best lunch a few days ago.

 Flaky, breaded fish. Crispy sweet potatoes. Crunchy veggies.
A meal fit for a king, I mean, queen
 Is your mouth watering yet?

My dad and sister were gone a few Saturdays ago on a camping trip, so, naturally, my mom and I made an extravagant lunch for ourselves. We had the time, so why not?

I had a notion to make fish sticks one day and it lingered in my mind for a really long time. The perfect accompaniment for fish is chips, of course! What else would I do, but make some sweet potato fries. The vegetables were definitely a part of the spotlight, too.  

The fries tasted like toasted marshmallows!

But, I've decided to be kinda mean and dish out only the side dish recipes first. Muahahaha! >:) Sorry! I don't wanna bombard you with recipes. That wouldn't be fair. So, I'll save the fish stick recipe for another time.

Sweet Potato Fries:

2-3 medium-sized sweet potatoes
1 T. olive oil
salt to taste
dash of cinnamon

1. Preheat the oven to 400 degrees F.
2. Cut potatoes into french fry-like strips of desired thickness.
3. Mix with olive oil, salt, and cinnamon in a bowl.
4. Grease a jelly roll pan or baking sheet and spread fries evenly onto sheet.
5. Bake for 15-17 minutes. Be careful not to over-bake or they will get burnt and not have a very pleasant aftertaste.
Great with balsamic vinegar


Veggie Mix:

2 small-to-medium sized yellow squashes or zucchini
1 medium onion, diced
1 T. fresh rosemary
salt to taste
(also good with a bunch of chopped asparagus)

1. Cut up squash into half-moons. Cut up the onion, too.
2. Heat a large pan to medium heat. When it is hot, grease.
3. Add the yellow squash and cook for about 5 min.
4. Add onion, rosemary, and salt.
5. Simmer until squash is soft.
6. Serve with olive oil or a dash of pepper.

Substitution Notes: You might be able to sub the sweet potatoes for butternut squash or maybe carrots even. Zucchini would work fine instead of the squash. You can omit the onion if necessary, but it adds flavor. Anything else you happen to try please let me know in the comments. Thanks! :)

What do you do when you have time by yourself with a friend or family member?

I like to cook something that the person who left doesn't like. For example, whenever my dad leaves for a day or two, we cook chicken. When my sister leaves, we make fish. I also like to go shopping or eat to out, so we can make the most of our time alone together. My mom and I like to have Biggest Loser marathons. ;)
