Grilled Stuffed Burritos

Sorry, the picture isn't of corn tortillas. My dad used a flour tortilla since he doesn't have to be gluten-free.

Anyways, this is one of my favorite ways to eat Mexican food. We usually make grilled stuffed burritos from leftover Mexican instead of having tacos again.
Look at all the pretty colors!

My dad used to work at Taco Bell in high school. He learned how to do everything there (except for becoming the manager). So, naturally, I've known how to fold a burrito since the 2nd grade.

That's not the point. The point is, he gathered a lot of Taco Bell secrets from those days, and one of them was making grilled stuffed burritos. It is a must. You've never lived until you've had a grilled stuffed burrito.

(I'm not using exact measurements, because my family eats in bulk and I don't know how much you want to make. You can also opt to omit any of these ingredients.)

ground beef with taco seasoning or add your own spices
refried beans
cheese
onion
sour cream
guacamole
salsa
green or red pepper
tomatoes
jalapeƱos
cilantro
corn tortillas
chips

1. Reheat (or heat for the first time) your ground beef. Make into as small or large as you like.
2. Add seasoning.
3. Put into a bowl and set aside.
4. Make refried beans and get out other ingredients.
5. Spread corn tortilla with butter or spray with cooking spray (I use olive oil).
6. Pile on toppings and fold tortilla in half.
7. Heat on stove top until underside is golden brown. Flip and do the same to the other side.
8. Load with sour cream, salsa, and/or guacamole.

I can, however, provide you with a guacamole recipe. Though, it really shouldn't be called recipe, because it's so simple.

1 avocado (any kind)
salt to taste
lime and/or lemon juice to taste (optional. I normally leave it out.)

1. Mash avocado with a fork.
2. Add salt and combine with avocado.
3. Add lemon or lime juice. Stir together.
4. Spice up your grilled stuffed burrito or taco!

What do you like on your tacos?

I love salsa, sour cream, cheese, cilantro, onion, beef, beans, lettuce, and chips. Pico de Gallo is just ok for me, but I prefer salsa.
